Mulled Wine Recipe


  • 5 oranges
  • 50 cloves
  • 4 lemons (only for rind and juice)
  • 850 ml water
  • 115 grams castor sugar
  • 2 cinnamon sticks
  • 2 liters red wine
  • 150 milliliter brandy


  1. Prick the skin of 3 oranges with a fork and insert with the cloves, then set aside. Thinly pare the rind and squeeze the juice from the remaining oranges.
  2. . Mix the orange rind and juice with the rind and juice of 4 lemons, water, sugar and cinnamon in a heavy-base saucepan and bring to a boil over medium heat, stirring occasionally, until the sugar has dissolved. Boil for further 2 minutes without stirring, remove from heat, stir once again and leave to stand for 10 minutes. Strain the liquid into a heatproof jug, pressing down on the contents of the sieve to extract all the juices.
  3. Pour the wine into a separate saucepan and add the strained spiced juice, the brandy and the clove-studded oranges. Simmer gently without boiling. Remove the saucepan from the heat. Strain into heatproof glasses and serve the mulled wine immediately.
